NIGIRI
One of the purest and most traditional expressions of Japanese sushi. Nigiri is a small ball of rice topped with a piece of raw fish.
Uramaki
The meaning of the name is literally ``inside-out roll.`` It could be defined as a ``rebel roll`` because it goes against the usual norm of wrapping the rice on the outside.
Hosomaki
A small sushi roll made with one filling. ``Hoso`` in Japanese means thin, and ``maki`` means roll, so the word together literally means ``thin roll.``
